Maple Frosted Blueberry Pancakes

Who said you can only have pancakes for breakfast? These are a quick and easy summer snack that’ll be a sure hit.

Recipe

Ingredients

  • 3 Cups complete buttermilk pancake mix
  • 1 ¾ cups cold water
  • 1 cup blueberries
  • 2 teaspoons all-purpose flour

Frosting

  • cup Pure Chicago Maple syrup
  • 2 cups confections sugar
  • ¼ cup butter softened

Directions

  1. Preheat oven to 350 degrees. Stir pancake mix and water just until moistened. In another bowl, toss blueberries with flour. Fold berries into batter.
  2. Transfer to a greased 13×9-in. Baking pan. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool completely in the pan on a wire rack.
  3. Beat frosting ingredients until smooth; spread over cooled cake.
