Quiche

Ingredients

  • 1/4c pure Chicago Maple organic maple syrup 
  • 1 tbsp olive oil
  • 2 tbsp butter, melted
  • 3 eggs
  • 1/2  leek, thinly sliced
  • 1 small carrot, grated
  • 1/2 zucchini, grated
  • 1/4 cup cheddar cheese, grated
  • 1 1/2c bread crumbs
  • Salt and pepper to taste
  • 6 cherry tomatoes, sliced in half
  • 1 cup milk

Directions

  1. Preheat the oven to 350° F.
  2. In medium bowl mix breadcrumbs and butter.
  3. Oil a 10 in. quiche pan and coat with breadcrumbs. Set aside.
  4. In a large bowl, beat together the eggs, milk, pure maple syrup, carrot, zucchini and leek. Add the cheese and season with salt and pepper.
  5. Pour the mixture into the quiche pan and top with cherry tomatoes.
  6. Bake for 45 minutes.
  7. Let cool 10 minutes before serving.
